I love pancakes, but always worry that the store-mixes contain nothing of nutritional value. With this home-made recipe, I know each ingredient that goes into it and know I'm not just getting empty calories. The combination of bananas, coconut oil, vanilla extract and maple syrup makes for tons of complimentary flavour and comes out better than regular pancakes.
