Quinoa Banana Pancakes

 

I love pancakes, but always worry that the store-mixes contain nothing of nutritional value. With this home-made recipe, I know each ingredient that goes into it and know I'm not just getting empty calories. The combination of bananas, coconut oil, vanilla extract and maple syrup makes for tons of complimentary flavour and comes out better than regular pancakes. Finally, load up the song "Banana Pancakes" by Jack Johnson and get cooking!

For the gluten-sensitives, you can substitute the 1 cup regular flour in the recipe with 1/4 cup Quinoa Flour and 3/4 cup Organic Brown Rice flour. with Add some extra goodness with blueberries or raspberries!
