Quinoa is a highly nutritious alternative to couscous, pasta and rice. It is one of the only non-meats that is considered a "complete protein" - that is, it contains all 9 essential amino acids that your body requires for organ and muscle function. While other grains need to be paired with certain vegetables that make up for the amino acids they lack, quinoa is complete protein by itself and this makes it ideal for vegetarians and vegans. With about 7 grams of protein per 46g serving, it is nearly 9% protein by weight. Quinoa is also a great source of Iron, which is used by the body to create red blood cells, and is another common deficiency in women and vegetarians/vegans.
Quinoa is easy to cook, very similar to rice and can even be made in a rice cooker. Generally 1 cup of dry Quinoa (180g, or about 4 servings) is rinsed and then cooked with 2 cups of water until all the water is absorbed. Cooked quinoa becomes much larger than it starts, is translucent in the middle and retains a spiral germ on the outside. It has a slightly crunchy texture and readily absorbs flavourings, broths and sauces that it is cooked with. Quinoa can be toasted in a pan before cooking (but after rinsing) to make the flavour more nutty.
Quinoa can be made as a side dish, a base for more flavourful main dishes (eg. meats, sauteed vegetables, stir fry), or even baked right into products like cakes and brownies as a healthy alternative for flour.
