Heat olive oil in a large skillet over medium high heat
Add minced garlic and jalapeno, stirring for 1-2 minutes until garlic lightly browns
Crush chili flakes and cumin seeds
Add in vegetable broth, quinoa, beans, tomatoes, corn, chili flakes and cumin
Season with salt and pepper, to taste
Bring pan to a boil; cover, reduce heat and simmer for 15-20 minutes until quinoa is cooked
Stir in avocado, lime juice and cilantro
For the health conscious serve hot with chicken strips and for the party conscious pour over nachos add cheese and bake until the cheese is melted.
